2 oz herbs/or spinach or cress)
2 oz nuts (hazel, walnut or pinenuts)
2 oz parmesan or strong cheddar
2 or 3 tablespoons olive oil

Whiz with a mixer and serve with hot pasta.
Pumpkin, mascarpone and sage rice.
30 gr butter and 1 onion chopped
2 tbs fresh sage, chopped and 2 garlic cloves
600 gr pumpkin cut into chunks
200 gr brown basmati rice
600 gr vegetable stock
100 gr mascarpone and 25 gr parmesan cheese
Soften onion in butter. Add sage and garlic and cook for 2 mins
Add pumpkin and rice and stir for 1 minute. Pour over stock and simmer for about 25 mins. Stir cheeses and serve with crispy fried sage leaves and parmesan shavings
